Thai Black Rice Pudding with Coconut Cream 😍😋🍨 RECIPE ⤵️ This pudding can be enjoyed hot, or stored in the fridge for up to 2 days and enjoyed chilled.
Bananas and mango go particularly well here, but you can add fresh berries here as well.
Serves: 2
Ingredients:
½ cup The Rice Company Black Rice (available from Woolworths, Catch and IGA)
1 ½ cup water
2 tablespoons sugar (adjust to taste)
1 cup coconut cream
1 ripe banana (or mango or other fresh fruit)
Method:
Rinse the black rice thoroughly under cold water until the water runs clear. Transfer the rinsed black rice to a rice cooker and add water. Cook the rice according to the rice cooker's instructions until it is tender and fully cooked.
Add sugar and coconut cream to the rice and stir well for the sugar to dissolve.
Divide the pudding between 2 bowls and allow to cool slightly before serving. Top with sliced banana or other seasonal fruit and drizzle with any leftover coconut cream if desired.
Alternatively, once cooled, store rice pudding covered in the fridge for up to 2 days and enjoy chilled.

Ingredients
1 tbsp extra virgin olive oil
1kg chicken wings, tips removed
3 tbsp honey
4 tbsp soy sauce
1 tbsp mirin
1 tbsp white vinegar
1 x 2cm piece of ginger, chopped
2 cloves garlic, chopped
200g Thai jasmine rice, washed 3-4 times
500ml chicken stock
To garnish
Spring onions, thinly sliced
Sesame seeds
Crispy chilli oil (optional)
Method
Preheat the oven to 200°C.
Combine the honey, soy, mirin and vinegar and add chicken and marinate overnight, if you have time.
In a baking dish that is hob friendly, place over medium heat and add oil, ginger and garlic. Fry to soften then add rice and coat in the ginger mixture. Add a small pinch of salt. Cover with stock and bring to a boil. Nestle chicken into rice and pour in any extra marinade.
Bake in the oven for 35-40 minutes or until the rice has absorbed all the liquid and the chicken is cooked and caramelised.

Ingredients:
1 cup The Rice Company Jasmine Rice, (washed twice to remove any starch)
1 red onion, finely chopped
2 small green chilli, finely chopped
1 tsp ginger, grated
1 tsp garlic, grated
¼ cup coriander, finely chopped
¼ tsp chilli powder
½ tsp cumin powder
½ tsp coriander powder
¼ turmeric powder
Pinch of salt
½ cup besan flour (chickpea flour)
Ghee, for frying
Greek yoghurt, to serve
Mint chutney, to serve
Mango chutney, to serve
Method:
After washing your rice, cook the rice with 1½ cups of cold water. Bring to boil, put the lid on the pan and allow the rice to simmer until all the water has been absorbed by the rice. Allow the rice to cool down slightly.
In a large bowl, mix the rice, red onion, green chilli, ginger, garlic, chopped coriander, chilli, cumin, coriander powders, turmeric, salt and besan until well combined. Set aside for 5 minutes. This allows the onion to release its moisture, making the batter wet.
Heat the ghee in a deep fry pan on medium-high heat. Before frying, add ¼ cup water to the mixture, adding in the water bit by bit to check the consistency is right. The batter needs to be thick and able to dollop in ghee using two tablespoons.
Fry off dollops of the batter, in batches of 4-5 until all the batter is fried.
Serve with yoghurt, swirled with mint and mango chutney.

Ingredients
2 cups chickpeas dried – soak overnight in boiling water to soften (quickens the cooking time)
2 tbsp extra virgin olive oil
1 tsp black mustard seeds
1 tsp cumin seeds
1 brown onion, sliced
A handful of curry leaves
1 tbsp garam masala
1 tsp turmeric powder
1 tsp ginger crushed
1 tsp garlic crushed
1 chilli, deseeded and chopped
1 punnet cherry tomatoes – for colour and awesomeness
Salt & pepper, to taste
Boiling water (enough to cover chickpeas later)
Coriander, to serve
For serving:
1 cup Greek yoghurt (use a dairy free alternative for plant based)
1 tsp cumin powder
Juice ½ a lemon
Salt & pepper
Basmati rice, cooked
Method
In a pan on medium heat add olive oil then add mustard seeds, cumin seeds, onion chopped and curry leaves. Wait until the onion is slightly golden and meanwhile mix the garam masala, turmeric powder, ginger, garlic and chilli in a cup – you can add water to make a slight paste consistency. Add to the pan and add some water so the spices do not burn. When fragrant, add chickpeas and salt to taste (if desired). Toss the chickpeas around so coated in spices and gently fry off for 5 minutes. Add boiling water, enough to cover the chickpeas, the water will resorb over time.
Gently simmer stirring occasionally over 40 minutes.
Now add cherry tomatoes and stir through – continue to simmer for another 15-20 minutes so tomatoes become blistered, and the dish is done when the chickpeas are soft to touch.
Meanwhile prepare the simple raita on the side by combining yoghurt, lemon juice, salt, pepper and cumin powder (can add cucumber and carrot grated for more rainbows).
Serve the chickpea curry on a bed of rice with yoghurt on the side and coriander on top.

Ingredients
1½ cups of The Rice Company basmati rice, washed 3 times
1 vegetable stock pot, dissolved into 3 cups of water
30g butter
1½ tsp curry powder
¾ cup currants
¾ cup peanuts, chopped
1 red capsicum, finely diced
4 spring onions, cut into rounds
Dressing
1 x 2 cm piece of ginger, minced
Juice and zest of 1 lemon
2 tbsp apple cider vinegar
3 tbsp extra virgin olive oil
Method
Place the rice and vegetable stock into a medium pot and bring to the boil. Turn down to a low heat, cover and cook for 10 minutes. Cool for 20 minutes.
Mix the dressing ingredients together.
In a pan melt butter and add the curry powder, currants and peanuts. Toast until the nuts are golden.
Use a fork to separate the grains of rice and place in a large bowl. Add the nut mixture, capsicum, spring onions and dressing and toss together.

Ingredients
2 x sides of salmon (about 600g after tail end trimmed. Use tail fillets for another use), skin on and pin boned
¼ cup Thai Jasmine rice, cooked
20g butter
1 onion, finely chopped
½ tsp coriander seeds, crushed
1 long red chilli, finely chopped
1 large handful of spinach
4 sprigs of dill, finely chopped
4 sprigs parsley, finely chopped
Pinch of sumac
2 tbsp pistachio, finely chopped
Salt & pepper
1 tsp extra virgin olive oil
Sauce
½ cup Greek-style yoghurt
2 tbsp tahini
Juice ½ lemon
Method
Preheat the oven to 160°C and line a large oven tray with baking paper.
Heat a pan over medium heat and add the butter, onion, coriander seeds and chilli. Cook until softened and then add the spinach and wilt. Remove off the heat and add the rice, herbs, sumac, nuts and salt and pepper.
Salt the flesh side of the salmon. Lay six pieces of twine along the length of the baking paper, leaving space between each. Place one side of the salmon, skin side down with a little olive oil on it, on the baking paper. Spread the rice mixture over evenly and top with the other salmon side. Tie together with the string. Brush with oil and season again with salt.
Bake in the oven for 35-40 minutes. Allow to cool slightly.
Meanwhile, make the sauce by combining all the ingredients together.

2 tbsp ghee
Whole garam masala (1 cinnamon stick, 3 cardamom pods, and 3 cloves, slightly crushed)
1 brown onion, thinly sliced
1 small green chilli, finely chopped
1 tsp ginger paste
1 tsp garlic paste
¼ tsp turmeric powder
2 tsp salt, or to taste
3 cups basmati rice, washed and soaked for 30 minutes
1 cup moong dal, washed and soaked for 30 minutes
Fresh coriander, chopped to serve
Greek yogurt, to serve
Lebanese cucumber, sliced to serve
Tardka (tempered oil)
3 tbsp ghee
½ red onion, thinly sliced
2 dried red chillies
½ tsp cumin seeds
Method
In a large saucepan on medium heat, heat the ghee. Add in the whole garam masala, onion and green chilli. Fry for 3 - 5 minutes until the onions are lightly golden brown. Mix the ginger and garlic paste in and continue to fry for 1 - 2 minutes. Add the turmeric powder, salt and then stir through the basmati rice and moong dal. Pour in 6 cups of boiling water and cook on high heat until boiling for 5 minutes. Turn heat down to low, and cover with a lid. Cook for 15 minutes. Remove from heat and allow to sit for 10 minutes before serving.
To make the tardka, heat the ghee in a small frypan on high heat. Add in onions, cumin seeds and red chilli. Fry for 3 - 5 minutes until onions are crispy and oil aromatic.
Serve khichdi with tardka over the top, sprinkled with fresh coriander, Greek yogurt and cucumber slices on the side.

1 tbsp olive oil
1 onion, chopped
1 cup risotto rice or short grain rice
4 chicken drumsticks
1½ tbsp of tomato paste
¼ tsp allspice
1 bay leaf
1.5L chicken stock
2L water
Fresh parsley, finely chopped to garnish
Salt
Method
Heat oil in a large pot and sweat the onions for 2 minutes. Add the tomato paste and cook off for a few minutes before adding the allspice and bay leaf.
Add the rice, stock, water and chicken drumsticks and salt to the pot. Bring to the boil and then turn down the heat and simmer for 1 - 2 hours until thick and rich and the chicken is meltingly tender. Once cooked, use a stick blender to blitz 3 - 4 times to make it creamy.
Serve with fresh parsley.

1 packet of One Pot Rice with Lentils & Italian Herbs
2 tablespoons olive oil
6 thick sausages (your choice of flavour)
2 tablespoons olive oil
4 large truss tomatoes, chopped roughly
Salt and pepper to taste
Fresh herbs (basil or parsley), optional
Method
Place One Pot Rice packet contents in a medium saucepan and add water. Cover and bring to a boil, reduce heat to a gentle simmer and cook covered for 15 minutes, until the rice and lentils are cooked and the water is absorbed.
Meanwhile, heat a large frying pan over medium heat. Add 1 tablespoon of olive oil to the pan. Place the sausages in the pan and cook for about 10-12 minutes, turning occasionally, until they are browned and cooked through.
While the sausages are cooking, prepare the tomato olive oil salad. In a medium bowl, combine the chopped tomatoes, remaining olive oil, salt and pepper. Toss to coat.
Once the sausages are cooked, remove them from the pan and let them rest for a couple of minutes. Fluff rice with a fork and divide between plates or place in a serving bowl. Garnish with extra chopped fresh herbs, if desired.
Serve the pan-cooked sausages alongside the tomato olive oil salad and One Pot Rice. Garnish with additional basil leaves, if desired.

Method
Rinse the red rice in a sieve under cold water until the water runs clear. Then, place the rinsed rice in the rice cooker with 1 cup of water and cook according to the rice cooker's instructions.
Meanwhile, place frozen vegetables in a large microwave-safe bowl, add ¼ cup water, cover and microwave for 2 minutes to defrost. Strain away excess water.
In a large skillet or wok, heat the oil over medium-high heat.
Add the beef strips to the skillet and cook until browned on all sides. Remove the beef from the skillet and set aside.
Return skillet to heat. Add the defrosted vegetables to the skillet and cook until they are heated through and slightly tender. This should take about 3 minutes.
Return the cooked beef to the skillet with the vegetables and stir to combine. In a small bowl, mix together the soy sauce and oyster sauce. Pour the sauce over the beef and vegetables. Stir well to coat everything evenly. Season with pepper to taste.
Once the red rice is cooked, fluff it with a fork and divide it among serving bowls. Serve the beef and vegetable stir-fry over the bed of red rice.
For best results, remove the beef strips from the fridge about 30 minutes before cooking.

½ cup The Rice Company Black Rice (available from Woolworths, IGA and Catch).
1 ½ cup water
2 tablespoons sugar (adjust to taste)
1 cup coconut cream
1 ripe banana (or mango or other fresh fruit)
Method

Ingredients
2 cups chickpeas dried – soak overnight in boiling water to soften (quickens the cooking time)
2 tbsp extra virgin olive oil
1 tsp black mustard seeds
1 tsp cumin seeds
1 brown onion, sliced
A handful of curry leaves
1 tbsp garam masala
1 tsp turmeric powder
1 tsp ginger crushed
1 tsp garlic crushed
1 chilli, deseeded and chopped
1 punnet cherry tomatoes – for colour and awesomeness
Salt & pepper, to taste
Boiling water (enough to cover chickpeas later)
Coriander, to serve
For serving:
1 cup Greek yoghurt
1 tsp cumin powder
Juice ½ a lemon
Salt & pepper
Basmati rice, cooked
Method
In a pan on medium heat add olive oil then add mustard seeds, cumin seeds, onion chopped and curry leaves.
Wait until the onion is slightly golden and meanwhile mix the garam masala, turmeric powder, ginger, garlic and chilli in a cup – you can add water to make a slight paste consistency.
Add to the pan and add some water so the spices do not burn.
When fragrant, add chickpeas and salt to taste (if desired).
Toss the chickpeas around so coated in spices and gently fry off for 5 minutes.
Add boiling water, enough to cover the chickpeas, the water will resorb over time.
Gently simmer stirring occasionally over 40 minutes.
Now add cherry tomatoes and stir through – continue to simmer for another 15-20 minutes so tomatoes become blistered, and the dish is done when the chickpeas are soft to touch.
Meanwhile prepare the simple raita on the side by combining yoghurt, lemon juice, salt, pepper and cumin powder (can add cucumber and carrot grated for more rainbows).
Serve the chickpea curry on a bed of rice with yoghurt on the side and coriander on top.

1kg whole chicken 1 tbsp sea salt
1 tbsp turmeric powder
3 cups Jasmine rice
Nuoc mam dipping sauce (see below)
½ cup fried shallots
Salad
200g shredded green papaya or white cabbage
1 small brown onion, thinly sliced
1 bunch Vietnamese mint, leaves picked
100g pickled carrot and daikon
½ cup fried shallots
Pickle Daikon and Carrot
150ml white vinegar
100g caster sugar
100ml water
Pinch of salt
1kg carrots, cut into matchsticks
300g daikon, cut into matchsticks
Nuoc Mam Dipping Sauce
2 cloves garlic
3 birds eye chilli, finely chopped
150ml fish sauce
140g caster sugar
100ml warm water
Method
To make the pickled carrot and daikon, combine the vinegar, salt and sugar in a bowl and add 100 ml water. Stir until the sugar has dissolved. Rinse the daikon and carrot under warm running water for 5 minutes, then drain thoroughly and pat dry with a paper towel. Transfer to a large plastic container or non-reactive bowl. Pour the pickling liquid over the vegetables and set aside in the fridge for 1 - 2 hours but best left overnight, after which time the pickles will be ready to use.
Rinse the chicken and pat dry with a paper towel. Bring a large pot of water to the boil, add the chicken, salt and turmeric and poach the chicken for 20-25 minutes. Turn off the heat and leave the chicken in the liquid for a further 10 minutes, then remove the chicken and cool on a wire rack. Reserve the poaching liquid.
Rinse the rice under cold water until the water runs clear, moving the rice the whole time to ensure each grain is well rinsed. Drain and transfer the rice to a saucepan and pour in enough poaching liquid to cover the rice by about 2 cm (¾ in). Place over medium heat, bring to the boil, then reduce the heat to a simmer and cook for 15 minutes or until the liquid has been absorbed and the rice is tender.

Method
Place One Pot Rice packet contents in a medium saucepan and add water.
Cover and bring to a boil, reduce heat to a gentle simmer and cook covered for 15 minutes, until the rice and lentils are cooked and the water is absorbed.
Meanwhile, in a large pan or skillet, saute the chopped onion in olive oil or ghee for 3 minutes over medium heat, until it turns translucent.
Add the sliced chicken breast to the pan and cook until it is no longer pink.
Pour the jar of butter chicken sauce into the pan and stir well to combine with the chicken and onions. Reduce the heat to low and simmer the chicken in the sauce for about 10 minutes.
While the chicken is simmering, bring a large saucepan filled with about an inch of water to the boil. Place a steam basket on top and add the green beans.
Steam for 6-8 minutes.
If using, prepare pappadums, rotis or naan.
To serve, fluff up One Pot Rice with a fork and divide between serving bowls. Add butter chicken and steamed greens on top. Serve with coriander leaves and your choice of pappadums, rotis or naan as an option.

2 tbsp vegetable oil
4 large green prawns, head and shells removed, tail left intact and deveined
4 x 80g fillets of kingfish, skin on
2 medium squid, gutted and scored then cut into squares, tentacles halved
2 heaped tbsp Thai red curry paste
400ml coconut milk
300ml vegetable or chicken stock
1 tsp fish sauce
1 tsp brown sugar
Juice 1 lime, plus extra to garnish
1 large handful of snow peas
1 bunch broccolini, cut in half
A handful of coriander leaves
Crispy fried shallots, to garnish
Rice, to serve
Salt and pepper
Method
Heat a wok over a medium heat and a teaspoon of the oil and the curry paste. Fry off for a minute then add the coconut milk and stock and bring to the boil. Simmer for 5 - 6 minutes to thicken and then add the fish sauce, sugar and lime. Add the vegetables and cook for a minute, then turn the heat off.
Heat a pan over a high heat and add the remaining oil. Season the seafood with salt and pepper. Add the fish skin side down and cook for 2 minutes. Turn fish over and add the prawns and squid and flash fry for a minute.
To serve portion rice onto a plate, top with vegetables and seafood. Ladle over the red curry sauce. Garnish with coriander, extra lime and crispy fried shallots.

15g butter
1 cup of uncooked The Rice Company Basmati rice
1 onion, chopped
95g can salmon, drained
4 spring onions, finely chopped
4 sprigs of dill, finely chopped
Zest and Juice 1 lemon
100g feta, crumbled
1 tsp extra virgin olive oil
Salt and pepper, to taste
Method
Melt the butter in a pan and add the onion.
Cook for 3-4 minutes on a medium heat until softened. Melt the butter and saute the onions with a little oil and salt. As the onions start to soften add the uncooked rice, separate the grains and coat in the butter and onions mixture. Add 1.5 cups of water to just cover the rice, bring to the boil and place the lid on and simmer until the rice is cooked.
Once the rice is cooked, remove off the heat and fold through the salmon along with the dill, spring onions, olive oil and lemon.
Pour into a shallow bowl, season and garnish with feta. Serve warm.

Serves 4
Ingredients
1 packet of One Pot Rice with Lentils and Quinoa (Available from Woolworths, IGA and Catch)
4 x 180g salmon portions, evenly sized
1 tablespoon white (shiro) miso paste*
1 tablespoon water
1 tablespoon olive oil
2 teaspoons honey
1 bunch bok choy, quartered legthways
1 bunch broccolini, ends trimmed slightly
2 tablespoons soy sauce
Optional
½ teaspoon sesame seeds
½ teaspoon garlic granules
Method
Place One Pot Rice packet contents in a medium saucepan and add water. Cover and bring to a boil, reduce heat to a gentle simmer and cook covered for 15 minutes, until the rice and lentils are cooked and the water is absorbed.
Meanwhile, transfer salmon to air fryer (see TIP below) or if baking, preheat oven to 180°C and place the fish on a paper lined baking tray.
In a small bowl, mix together the miso paste and water until smooth. Add olive oil and honey and mix well. Baste the glaze over the fish, covering the top and sides thoroughly with the paste.
Airfry the fish for 10 minutes at 170°C or bake for 12 minutes at 180°C in a preheated oven.
Meanwhile, bring a large saucepan filled with about an inch of water to the boil. Place a steam basket on top and add the greens. Steam for 10 minutes.
To serve, fluff up One Pot Rice with a fork and divide between serving plates. Top with salmon and serve with steamed greens on the side, drizzled with soy sauce and sprinkled with sesame seeds and garlic granules, if using.
*Note: you can get white (shiro) miso paste from most supermarkets or Asian grocers.

1 red onion, finely chopped
2 small green chilli, finely chopped
1 tsp ginger, grated
1 tsp garlic, grated
¼ cup coriander, finely chopped
¼ tsp chilli powder
½ tsp cumin powder
½ tsp coriander powder
¼ turmeric powder
Pinch of salt
½ cup besan flour (chickpea flour)
Ghee, for frying
Greek yoghurt, to serve
Mint chutney, to serve
Mango chutney, to serve
Method:
After washing your rice, cook the rice with 1½ cups of cold water. Bring to boil, put the lid on the pan and allow the rice to simmer until all the water has been absorbed by the rice. Allow the rice to cool down slightly.
In a large bowl, mix the rice, red onion, green chilli, ginger, garlic, chopped coriander, chilli, cumin, coriander powders, turmeric, salt and besan until well combined. Set aside for 5 minutes. This allows the onion to release its moisture, making the batter wet.
Heat the ghee in a deep fry pan on medium-high heat. Before frying, add ¼ cup water to the mixture, adding in the water bit by bit to check the consistency is right. The batter needs to be thick and able to dollop in ghee using two tablespoons.
Fry off dollops of the batter, in batches of 4-5 until all the batter is fried.
Serve with yoghurt, swirled with mint and mango chutney.

6 thick sausages (your choice of flavour)

4 large truss tomatoes, chopped roughly
Salt and pepper to taste
Fresh herbs (basil or parsley), optional
Method
Place One Pot Rice packet contents in a medium saucepan and add water. Cover and bring to a boil, reduce heat to a gentle simmer and cook covered for 15 minutes, until the rice and lentils are cooked and the water is absorbed.
Meanwhile, heat a large frying pan over medium heat. Add 1 tablespoon of olive oil to the pan. Place the sausages in the pan and cook for about 10-12 minutes, turning occasionally, until they are browned and cooked through.
While the sausages are cooking, prepare the tomato olive oil salad. In a medium bowl, combine the chopped tomatoes, remaining olive oil, salt and pepper. Toss to coat.
Once the sausages are cooked, remove them from the pan and let them rest for a couple of minutes. Fluff rice with a fork and divide between plates or place in a serving bowl. Garnish with extra chopped fresh herbs, if desired.
Serve the pan-cooked sausages alongside the tomato olive oil salad and One Pot Rice. Garnish with additional basil leaves, if desired.

Twice Cooked Miso Chicken
Cook Time 45 minutes

Ingredients
4 chicken thigh cutlets (bone in)
1 tbsp white miso paste
1 tbsp honey
1 tbsp rice vinegar
1 x 3 cm piece ginger, minced
20g butter, softened
@thericecompanyaustralia jasmine rice, to serve
Method
Preheat the oven to 180°C and remove the chicken thighs out of the fridge 45 minutes before cooking.
Combine the miso, honey, vinegar, ginger and butter to form a paste. Smear over the chicken and place chicken into a non-stick oven-safe pan. Add 100ml of water to the pan and bake in the oven for 35 minutes.
Remove from the oven and place back on the stovetop. Baste the chicken with the pan juices over a medium-high heat and glaze the chicken turning regularly until a deep golden colour.
Serve with rice and simple cabbage salad.
